Holy Cake Pops Batman!

I thought I would try my hand at cake pops the other day since I was going to be entertaining a new play group I organized. I figured hey...just mix em up, roll em out, and stick the sticks in. Easy peasy. WRONG! O my gosh I was so wrong! First off I am 100 percent sure I made them entirely too large. They kept falling off the dang sticks. Actually I am pretty sure that was my whole issue. They were pretty darn tasty and I got hella compliments on them! They were just not very pretty. I am all about presentation too so that kind of ruined it for me.

Here are the hideous things...

Ugh my gosh that is embarrassing!

Yikes!

So that was that and I swear I am going to get around to baking those dang Cookies and Cream cupcakes! I guess I just haven't been in a baking mood. Booooo on me!

Hope everyone has a great weekend! Thanks for reading!

Irish Cream Dreams!

After my last cupcake disaster I was having a hard time getting the ball rolling again! It was a huge blow to the ego! Tonight went a million times better! I couldn't have picked a better recipe! I made Irish Creams with home made whipped topping.....they turned out amazing....

Now...as crazy as this sounds I am not big on sweets. I rarely eat the cupcakes I bake. This cupcake is perfect for someone like myself. The cupcake itself presents itself as a muffin, its got an almost salty undertone and the top and bottom are a little crispy, but once you bite into it it melts in your mouth like a cupcake! The whipped topping is the perfect match for this cupcake. Its not as overpowering as most frosting's but adds a little bit of sweetness to it! They would be perfect for St. Patty's Day with green whipped topping....I think a marshmallow frosting would work well for this too!

The Hubs is taking them to work tomorrow and I am excited to see the response I get! He absolutely LOVED them, but sometimes I worry he's a little biased.

I will be making Marshmallow Oreo Dreams in a couple days! Then I will post whichever recipe got the best response!

I hope everyone is having a great week so far! Thanks for reading!

Recipe for Exhaustion!

So...due to some unfortunate, unexpected events I did not get started even baking my cupcakes until like 9:30pm last night! I don't cut corners and quality control is super important to me so I was up baking and decorating until 12:30.

The marshmallow flower technique turned out beautifully and was actually fairly easy. It just took forever, and quite frankly I do not care if I see another mini marshmallow again. The task of cutting and dipping the marshmallow petals was incredibly tedious. The turned out great though....

My chocolate shapes turned out AWFUL! Just awful! I think I am going to need some kind of stencil or better bags and tips to make them! So...since that didn't go as planned I decided to pipe the rest and use my a few of the sprinkles from my ginormous stash, I also did some marble frosting. I think they turned out okay, but I was getting a little tired.....

Unfortunately I am unable to attend the picnic my cupcakes are going to, but I hope everyone there enjoys them! Despite it taking soooo darn long and staying up so late I actually enjoyed decorating them! Decorating is super therapeutic and relaxing for me!

I hope everyone has a super weekend. I will be scouring my cupcake recipes today to choose some flavors for the week!

No cuppy's of the week...

This week I am taking a flavor hiatus. I have to bake 4 dozed cupcakes for friday so I am mostly going to focus on my decorating skills!

I'm contemplating what to do and I have looked through my book a few times and gotten some ideas from some other cupcake pages. I think I am definitely going to try to make some milk chocolate shapes to top some of them with. I saw a really neat idea for marshmallow flowers! I would love to try working with some fondant but that depends on if I get to town this week or not. I plan to make boring flavors because I know I am good at those! 4 dozen cupcakes should give me lots of practice for whatever techniques I end up choosing!

I think I will also make up some cupcake pops! They look like sooooo much fun to make and there's lots you can do with them! I made up some yummy chocolate dipped strawberries for a Happy Divorce Party this last weekend! Milk Chocolate with marshmallow drizzle! They turned out great and they looked so pretty! I put them in some really bitchin animal print cupcake cups and garnished them with these really neat silver and gold   sprinkles! They were a hit I think! Definitely plan on making them again!

Hope everyone's having a FABULOUS Monday and continues to have a great week! Thanks for reading!

Java Chip Disaster....

ooooo where do I start. Yesterday was a long and rough day with the kiddos, soooo after the Creep was in bed and hubby was in control of the Brendo situation I decided to relieve some stress with a little baking. Bad idea.

This recipe called for 12 Egg whites. 12. That alone took forever. I got everything mixed up and the batter looked beautiful. It was so light and smooth. Notice I took pictures this time. If I had known that was going to be the only good thing about these cupcakes I would have stopped right there. After the batter everything pretty much went down hill. The cupcakes turned out almost muffin like. I've looked over the recipe a few times to see what I did wrong. I think the problem MAY have been the absence of baking soda from the recipe. That's the only thing I can think of. The mocha icing recipe was a bust as well. it turned out incredibly runny. I had to keep adding confectioners sugar and by the time I was done that's all you could taste.
So, long story short...this little adventure didn't help me relieve any stress but created a new stress. I would really like to try this recipe again some time. Probably not for a long time though. I am still mad about these dang cupcakes. Not only did that take a lot of time but a ton of ingredients. I got MAYBE 5 or 6 decent ones out of them. You can't ace them all I guess.

Thanks for Reading and hopefully I have some better food porn for ya'll next time!

Caramel Mocha!

I started with the caramel mocha recipe topped with whipped topping, grated dark chocolate and caramel sauce. I got good feed back! People seemed to enjoy them! I really enjoyed making this recipe. It was fairly simple and I learned a few new tricks!
These cupcakes tasted a little bit like a caramel frappacino to me. I used Colombian blend coffee which gave it a rich flavor without being to overwhelming. The batter turned out beautifully I kind of wish I had taken a picture of it! The one thing I will probably do differently next time is to go heavier on the caramel sauce and make dark chocolate curls instead of shavings.....you couldn't really taste the dark chocolate at all. I served these chilled but I think they would also be great right out of the oven while the caramel sauce is still warm!

All in all this recipe is a keeper!!!

Cupcakes of the Week (week of 7.25.11)

The Cupcakes for this week are going to be....

Caramel Mocha

Java Chip

Mocha

Decided to go with a coffee theme this week! These cupcakes involve a couple things I have not tried! I've never baked with coffee so that should be an experience! I also have never made my own frosting or sauces. I'm so excited to share them with my family and friends and get some feedback....
Food porn to come...

Welcome to my Blog!

Hey friends and strangers! Welcome to my blog chronicling my adventures in Cupcakes! I've loved baking forever and have recently become fascinated with cupcakes. They are the perfect treat for any kind of company or event, you can decorate them a million different ways and they are of course delicious! I someday plan to go into business doing small events such as birthday parties, baby showers, dinner parties etc. Before then I have some experimenting to do! I want to try all types of recipes and expand my experience with decorating!

 So here's the deal...
Every week I will pick 2-3 cupcakes that will be "Cupcakes of the Week". I'm not the best photographer but I'll try to include pictures, because cupcakes can just be so darn pretty and everyone could use a little daily food porn! My friends and family will be testing them out for me and then I will blog all about it!

I hope you all enjoy the read!
